Sole Francaise & Risotto, with Amy Talhouk

In this cooking class, you will learn how to make a mouthwatering dish of sole francaise, a classic French preparation of fish with a lemon-butter sauce. You will learn how to dredge, fry, and sauce the sole fillets until they are golden and flaky. You will also learn how to make a creamy and cheesy parmesan risotto, using arborio rice and vegetable broth. You will learn how to stir and simmer the rice until it is al dente and rich in flavor. And you will learn how to roast fresh asparagus with olive oil, salt, pepper, and Parmesan cheese, until they are crisp and tender. You will get to take some home along with the recipe and tips.
