Healthy Mediterranean Falafel

If you’ve always wanted to learn to make a Mediterranean Falafel – here’s your chance.  Joey [Joey Food Truck] Rugo’s and his famous food truck stop will be here to teach you the health conscious recipe, a blend of garbanzo beans with spices and served with the classic tzatziki sauce, a Mediterranean cucumber yogurt sauce. With the assistance of friend and teacher Zia Auch, the two will break down the recipes, prep work, and give you the cooking instructions for KANGURU’s signature falafel pita wrap andtabbouleh salad. Class participants will enjoy the tastes of and the recipes for the falafel, tzatziki sauce and fresh tabbouleh salad.

Joey Rugo is a 26-year-old chef and entrepreneur who will introduce his newest food truck KANGURU to the outer cape this summer that will serve falafel and other health conscious options.
