During this month in 1959 three Roosevelt elks were delivered to the Bronx Zoo from California. These elks are raised on ranges in the Provinces of Western Canada. Tonight we will start with elk carpaccio, elk sliders with wild mushroom sauce, rack chop of elk with red currant sauce, and finish with assorted cheeses and chocolates. Complimentary Fleurie will be served. This event takes place in the Simoneau Culinary kitchen and will have limited seating.
