In his honor, we will dine on his recipes of Ris de Veau roti Avec Pommes purée et truffles noir, Coquilles St Jacques au jus de Persil, eat purée de carrot, and Confit de veau epaule avec sauce au foie gras, and finish with a Fromage. $70/$65 for members.
