Chef Joe Cyzinski’s Rome inspired dinner: home to one of the world’s great populist cuisines.
Wednesday, February 19, from 6-8pm. The cuisine thought of today as distinctly Roman is the result of millennia of converging influences, from the pastoral traditions of the surrounding countryside to Rome’s Jewish community, the oldest in Europe. Despite – or because of – Rome’s eternal boom-and-bust cycle of opulence, the city is home to one of the world’s great populist cuisines: humble and inexpensive, using simple techniques to highlight what’s available and in season. Participants will dine on Pasta Amatriciana, Coda Alla Vaccinara, Lamb allo Scottadito, and finish with Tartufo. The meal will be accompanied by the famous white and red wines of the Lazio region. $70/$65 for members.
