One of the most coveted prawns in kitchens worldwide, carabineros are a large deep-sea prawn species that hail from the Eastern Atlantic into the Mediterranean Sea.
Treating these jumbo prawns like small delicate lobsters versus simple shrimp is recommended. Their jumbo size and prominent red color give these prawns striking plate appeal! Perfect for when you need to impress dinner guests. None of this prawn should go to waste, and some Europeans consider the flavor of their heads a delicacy!
We will have carabineros prawn ceviche with apples, gambas a la plancha, gambas al ajillo and finish with fresh cheeses. We will taste Cava, rose and Tempranillo wines.
