"When the old sent their young to found new villages, bringing grape vines to start new vineyards, they gave off by a ceremony called the sacred spring or Ver Sacrum. Since then, the Ver Sacrum is a symbol of the new tribe, new art, new vine. We renew this ancient vow, with the audacity to create something new. This is our Ver Sacrum.” After spending some time in the Gredos, in Madrid, where he fell in love with mountain-grown Garnacha, Eduardo Soler- an avid mountaineer-left a career in hospitality management to start making wine, all from Rhône varietals. One of the more exciting wine finds this year we will match his wines with chorizo choripan, head on shrimp asado, leg of lamb with chimichurri and finish with cheeses. We will taste his Marsanne, Rousanne, Grenache, Syrah and Monastrell driven wines.
