A slow-simmered mix of beans, pork sausages, lamb shoulder, pancetta, and duck, the cassoulet takes its name from the earthenware cassole in which it was traditionally made. The Center's main parking lot is at the rear of the campus off Union Street, with overflow parking in the town lot on the corner of Old Main and Union Street or down Mill Street. The accessible parking spaces are near the accessible ramp entrance at the rear of the campus.
